This recipe is quick and easy, and can be made with ingredients at hand. Serve it to those guests who strike unexpectedly.

It says 2 cups fruit cocktail but what about the juice?

I would drain it. I would also cut the white sugar waay back.

Interesting. I've only ever made the dump cake with fruit cocktail and (my memory fails me sometimes) I think it was drained but you added melted butter. There are only 2 eggs for moisture in that cake. . .I think you might need it.

One of the reviewers says to watch how much juice you add. I would add the entire can if you're using a brand name, possibly measure it and use about 1/3 cup if you are using a generic brand, then add until you think the batter is the right consistency. It wouldn't hurt to measure the amount of liquid in either can to get an idea of how much you're adding.

You want all or most of the juice but one reviewer said she had too much. But that's all the liquid except the eggs. It also has baking soda but no acid. I might add a squirt of lemon juice. It would perk up the fruit flavor, anyway.

I bought 2 cans of fruit cocktail - never buy that stuff any more - I think I will drain it and see how much juice there really is. Oh, it is the kind in juice - not heavy syrup.

This recipe has been in my family for years. It is a very moist cake with a delightful buttery coconut topping.
