Mel's Cookin' Now! is looking for: (21 recommendations)
What's your favorite summer dessert that's not chocolate? Looking for something light and/or fruity, preferable not too much cooking (more mix/chill, etc) ideas. Want to keep the house cool over te weekend but have delicious desserts for two events. Thanks!!

This light citrus pie combines two favorite dessert flavors-lime and cheesecake. It's the perfect treat on a hot day-and all the more inviting because you don't have to heat up the kitchen to prepare it.

Hi Mel! It was great to meet you. I should right this up I guess. We used to make a no bake cheese cake, graham cracker or vanilla wafer crust. Dissolve 1 4 serv. pack lemon jello in 1 c. hot water, set aside. Mix 1 8 oz pk cream cheese, 1/2 c. sugar, 1 tsp. vanilla until well blended and very smooth. Then whip a can of Milnot like whipped cream, stir all the cheese and jello into it, pour into crust and Chill. Very light and fluffy. Nothing like a real cheese cake except the taste. Have fun at your events. :)

Google "Lemonade stand pie" it's a Kraft Foods recipe, mixture of frozen lemonade concentrate, ice cream and cool whip in a graham cracker crust..just mix and freeze..soooo good.

How about either ice cream or a gelato? Those are always good for warm-weather desserts...?
