Gderr, if you can check with MIL do so, but most people on coumadin can eat greens...they just need to eat the same amount consistently so their blood levels of the drug don't change because they've eaten a unusually large or small amount. If she routinely eats greens, she'll be able to eat them at your house.

A quick and robust way to enjoy asparagus. Roasting highlights the natural sweetness of the asparagus while the balsamic vinegar offers a tangy compliment to this great side dish.

I love garlic! It's so easy to roast, and there are so many different ways to do it. It's great when spread on crackers or bread, or mixed into hummus, pasta sauce or just about anything else!

My Mother is on cumadin and can't have ANYTHING green! No beans, no peas, broccoli, cucumbers, etc. I think some glazed carrots would go well with your meal.

It is normally the dark leafy green vegetables, brussel sprouts, broccoli. But, if they normally eat a small amount a few times a week, it can be factored into the diet and accounted for. Anything high in Vitamin K. Lessens the effect of the coumadin. http://allrecipes.com/personalrecipe/62796726/bellepeppers-orzo-and-wild-rice-salad/detail.aspx

Green Bean Bundles

Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.
