I tweaked a bit (= I bought a can of pineapple chunks, and a can of rings. I used 6 oz of the juice from the chunks in the cake mix - and I quartered the chunks, before stirring them into the mix. I baked it in a [2 qt?] casserole dish. I used 4T butter, mixed with the juice from the can of rings, plus what was leftover from the can of chunks, plus a well rounded 1/2 c of brown sugar for the sauce. I sauteed all the rings, minus one. I cooked it longer than the recipe states - and even after I took the rings out, I kept the sauce simmering. I probably simmered it about 20 minutes, all told. I place the rings on the cake, one in the center, the rest around the edge, overlapping a bit. I served it with the sauce on the side. I was afraid that if I poured it over the cake, the cake would just be soggy. The cake got rave reviews all around! I may double it in a 9x12, in the future.

Hi Barb. After you posted that a few days ago here, I went out and was craving dessert at the store and bought the ingredients. I made it that night. I didn't make the sauce because I was fearful it would be too sweet. The cake was a bit dry and then I wished I had made the sauce. However, for some reason, the second day the cake was even better. It was very good though, and will definitely make again. Also very easy! Thanks!

How interesting! Mine was very moist - I wonder what the difference was? I'm glad you liked it. I would leave the sauce in the side. And I would still sauté pineapple to top it, even if you were leaving off the sauce.

---> Barb! That recipe sounds sooooo good, I printed two copies for myself! I really like cake mixes, but I would like to make my own pound cake and 'tweak'/adjust to make it a pineapple pound cake. THANKS so much for sharing this recipe. Wish I had a piece to go with my coffee this morning (I have has a sweet tooth all week, and have almost caved in to buy some scones from Starbucks... when I went there the other day, our busy Starbucks was out of scones! Boo-hoo, but less calories for me! (and I have a scone pan, but just wanted one of theirs!)...)
