Can you describe these. Are they fried, wedges? thin round crisps?

This is not a recipe but a definition of potato scallops.

The one we make at home are deep fried in a beer batter. Slice your par cooked potatoes, dip in beer batter and deep fry. Pretty simple. The important thing is the batter and the temperature of the oil. I always use rice bran oil as it has a higher smoking point and doesn't leave an oily taste. Also drain on paper towel before serving. I splash a little vinegar on them....very good.
