Obscure and unusual uses for tomatoes, please. I scored a deal on some nice vine ripe tomatoes. I have a tomato soup on the menu and a few other recipes planned. Maybe you have a tomato yum yum you have found, please share.

A crusty rosemary bread works nicely for this classic Italian salad. The bread - pulled into bite-sized pieces - tomatoes, cucumbers and red onions, are tossed with fresh herbs and just enough vinegar and oil to give them a nice glistening. Four generous servings.

Lebanese Chicken with Tomato and Mint Salad Serves 2 3tbsp Extra Virgin Olive Oil 4 thin BLSL Chicken Breast Escalopes 3½tsp Sumac + extra To Serve - set aside ½tsp ground Cumin ½tsp ground Coriander 2tbsp White Wine Vinegar 250g/½lb mixed Tomatoes - plum/vine/cherry - chopped 6 small Radishes - trimmed & thinly sliced Handful fresh Mint Leaves - shredded ¼ Cucumber - finely sliced and cubed 1tbsp flat leaf Parsley - chopped Salt and freshly ground Black Pepper In a bowl mix 2tsp Sumac, Cumin, Coriander, 2tbsp Oil with Salt and Pepper to taste to create a paste; Rub all over and coat Chicken and set aside; In a large bowl, mix the remaining Sumac, Oil and the Vinegar together and season with Salt and Pepper to tatse; Add the Tomatoes, Radishes, Cucumber and Parsley and toss vigorously together to ensure everything is well coated; Scatter over the Mint Leaves; Grill or Griddle Cook the Chicken for 1 or 2 minutes on each side or until cooked through with the juices flowing clearly and freely; Serve with crushed new potatoes with butter and the Salad over which sprinkle with a little extra Sumac.

On second thought, salad with tomatoe,cucumber,fine sliced red onion,salt pepper toss with olive oil,and white vinager.

I love roasting tomatoes with some olive oil, balsamic vinegar and salt and pepper. Haven't made this salad yet but it looks good! :)
