Going to get hot again today, and I hate to cook when it hot. What do you like to make when its hot and muggy?

I make a lot of sandwiches and salads. We also use the grill a lot. Things like meatloaf, potatoes and a vegetable can be cooked together on the same grill with little intervention.

Cilantro-Lime Dressing

After having a delicious TGI Friday's grilled chicken salad, I was determined to figure out the Cilantro-Lime salad dressing served with it. This is what I came up with. Delicious for a quick summery dinner. Grilled boneless chicken breasts served over a hearty green salad, and this dressing, voila!

We love fancy sandwiches and/or salads for dinner when it gets hot out. We had this the other night for dinner. I grilled a couple chicken tenders to slice on top. Also a great time of year to stock up your freezer with easy meal additions. I always have frozen spaghetti sauce, taco meat and leftover meats that I purposely made extra of.

Seasoned ground beef, pinto and kidney beans, lettuce, tomatoes, Cheddar cheese, and avocado round out this hearty main dish salad. It's topped with crushed corn chips and Catalina dressing.

I have made something like this when I went camping. I used chili beans in place of the pinto and kidney beans and I didn't use any meat in it. I was a gret and I didn't have to cook!

the above tuna salad has no mayo and is nice on top of a bed of greens with a slice of crusty bread.

This may not work for your way of eating but ....Instead of pasta I used zucchini "noodles", My review is recent if you want to check it out. Add a salad and it makes a nice lighter little heat dinner.

BBQ Chicken Cordon Bleu

A classic French dish gets a modern update with the help of your barbecue and a splash of Heinz Chili Sauce. Although this recipe is simple enough to make any weeknight, it is also impressive enough to serve to guests.

Hi; enjoy using the BBQ alot. Will wrap veggies in foil and cook them this way. Even use the BBQ as an oven for roasting dinners.

We use the BBQ alot also. Last year I use it almost every day. Thanks for the recipe. I would have never thought of making Cordon Bleu on the grill. Will have to give it a try

Combine lemonade concentrate with softened cream cheese and sweetened condensed milk. Fold in whipped topping and spoon into a graham cracker crust. The fridge takes care of the rest.

Crab and Shrimp Louis

This California original of seafood atop fresh greens is defined, in part, by its creamy Thousand Island dressing. If you wish, you can use either all shrimp or all crab meat.

I make my own version of this. After I get everything added, it makes for a filling cool meal and the kitchen is relatively clean.
