This strawberry frosting is made with real strawberries for an authentically flavored and colored cupcake topping.

I made these cupcakes with a teaspoon of Trader Joe's lemon curd in the middle of the batter (YUM) with this frosting on top. They were a big hit!

Hi Marianne - I have not found a frosting I like better than this! I made some last week and ate it with graham crackers! I just didn't feel like making a cake or cupcakes. I bet the kiddos are going to love your cupcakes!! What a wonderful mom you are. :o)

I made three dozen of these, and I do not think the frosting is as good when you make a double batch! It was hard to get it all together. Next time I would make one batch and then another.

I love the strawberry/lemon flavor combo, and often use strawberries as filling in lemon flavored cakes.

The "food police" at our elementary school has to approve everthing that comes in the door...they are very very strict..but yet they let the kids eat French toast in the cafeteria! Go figure.

Grammom, it's the same here, but they do allow teachers to bring in their cooked goods. I always feed the office staff, so they don't complain! I'm sure that sometime there will be a principal who won't allow it.

I am absolutely humbled Marianne that would make my recipes for Nicole's school. I'm speechless (can you imagine that? Naw, me either) Good to know about trying to "double" the RSF recipe. I never have much luck doubling recipes of any kind.

Oh, and I am going to put Lemon Curd in your SVCC next time I make them. That sounds just so good.

Cinco de Chili Chocolate Cupcakes with Chili Cream Cheese Frosting

First made for a chili cookoff, these dark chocolate cupcakes have the zing and deep, rich flavor of dried ancho chile and cayenne pepper. They are frosted with a chili-flavored cream cheese frosting, and each cupcake is decorated with a cute dried chili on top.

I made these for the teachers (the others were for the students in her classroom).

It's always fun to think back to all those years ago (45---can you believe that?!?). You never forget all the details of your first born (or your second born!).

She doesn't like sweets (like some of you.....). But her students and teacher friends really do! One of the teachers popped in today to tell me that they all love it when someone puts sweets out on the table for their breaks!

Thanks! She will carry on for the rest of this week! It used to carry on for the whole month with hints that her birthstone is a diamond!
