Potluck Bagels

Combine ham, cream of chicken soup, cheese, green onions and mayonnaise. Spread on mini-bagels and heat. Easy to prepare, always been a hit at potlucks. Can serve cold or make vegetarian by leaving out the ham and using a vegetarian cream soup.

May 6 is Nurses' Day. Our hospital recognizes all sorts of obscure celebrations, but Nurses' Day is not one of them. Therefore, we nurses are providing our own celebration-a potluck. I work that day, so I need something that can be kept at room temp or in a cooler. I am at work by 0645 AM and the potluck is at 5PM. Desserts and a sweet cheeseball are already taken, and our fridge will be filled with our lunches. Any ideas for a good dish, possibly a main dish, that can be kept in a cooler or left at room temp for a number of hours?

How strange! I can't believe the hospital does not acknowledge/celebrate Nurses' Day!?

Fewer and fewer hospitals do recognize Nurses' Day, unless they turn it into Hospital Week, which some have. My last hospital didn't acknowledge Nurses' Day the last few years I worked there. I thought it strange here because they do things for Cardiac Rehab, Lab, the doctors, etc.,....but totally ignore the nursing staff. The nursing staff is generally viewed as a liability by hospitals because we aren't seen as money-makers. At my last place of employment, they basically found ways to fire anyone older who made good money. All of our house supervisors (all fifty-something women) were removed at my last place of employment and replaced by young men in their twenties. There are some decent employers out there, I'm sure, but fewer all the time, it seems.

Our nurses are treated "special," getting to park on campus, when the rest of the [day] staff has to park a mile, or so, away and ride a tram in. [One advantage of working the cruddy shifts is that I get to park on campus (=]Parking has always been an issue, here. They let the nurses continue to park here when they started the tram-thing as incentive, because there was a nursing shortage /= But that policy creates hostility toward nursing staff.

I'll be curious to see if we celebrate Nurses' Day, next week. Pretty sure we still did last year . . .

It's sad that nurses aren't recognized for all the work they do...I'd like to see a hospital try to function without them. We appreciate all you nurses out there!!

How about a salad. Can be stored in a cooler with either ice or a freezer pack. Mix the dressing at the time of the get together.

I don't know why I didn't think of a salad...I'll have to see what quality of salad makings I can find on Sunday.

A bean salad would last well. I'm not sure how popular it would be. This is a little different; might be very good. Definitely worth trying out-I think DH & I will love it. Thanks, Nadine!

I didn't consider that another area might give us space...this would be great with some Hawaiian rolls or small buns if I can get Outpatient or Lab to let me use their area for a crockpot. I'll ask! We enjoy this recipe. You're making me think that things I had eliminated might be possible. Nice recommendations, Nadine!

In the Oriental section of a grocery store. Many other recipes for cold Asian noodle dishes on this site too.

I was going to do them for Easter brunch, and decided we had enough going on, so I didn't. I am going to have to do them, soon, too (= I'll have to try the mixed cheese - good idea, Lindsay!
