what kind of cheese do you put in your quesadillas. I want to buy a mexican cheese, but I am afraid it won't melt. Thanks in advance. p.s. Last night I made herbed goat cheese and asparagus quesadillas and they were outrageous!

Covergirl, I usually use a shredded mexican blend in my mex dishes and have no problems with not melting. PS: I was looking at my new Crate & Barrel cataloge yesterday, they have this cool quesadilla cooker for using on the grill! I'll post a pic for you :)

A spicy sauce of tomatillos and plenty of cilantro makes this simple chicken dish an extra special. Leave the jalapeno seeds and ribs intact if you want a little more heat.

This is a great recipe! AR changed the recipe. It originally called for Oaxacan cheese. I found it at a Mexican market. Melts wonderfully and is delicious!! :)

If you have a Kroger store they sell a great 'Quesadilla white cheese' in the hanging bags that is good and melts. Just for something quick I use what I have, I also use the Mex. cheese blend or just cheddar.

thanks so much for th suggestions. As to the cooker Saveur, I have a tiny kitchen that is already overflowing so I don't go for many gadgets, just do things the standard way, cook em up in a skillet worked fine. Thanks anyway. I am having a friend for dinner and making Mexican Lime Chicken Soup and quesadillas, probably with the mexican white cheese and asparagus wrapped and seared in pancetta or proscuito (probably spelled that wrong).

Depends but usually jack or pepper jack because one or both are usually in the fridge already and I tend to make quesadillas to use up leftovers rather than a new something.

At the basic level I use a simple mix of mozzarella and cheddar.

I too use up what's in the box, but this is a special little get together with a dear friend I don't see often and want to make it really nice for her. Thanks all.

I usually use what I have on hand. My fav is gouda and sharp cheddar mixed.
