Orzo, the ricelike pasta, is lightly flavored with lemon, then stirred into cooked sweet onion, zucchini, and yellow squash for a colorful side dish that's quick and light.

You could make this,or you could make spaghetti sauce and toss it with the sauce,or use it in soup. You could toss it with some butter, garlic, salt pepper.Which ever way you do it.Enjoy.

Make a little extra to send on the honeymoon! This lovely soup combines extra lean ground beef made into meatballs with thinly sliced escarole or spinach, orzo macaroni, and finely chopped carrot.

For a flavorful treat, saute rice-shaped orzo in butter before simmering in chicken stock. Stir in Parmesan cheese and fresh, chopped basil. Garnish with sprigs of basil to serve.

Made this as a side dish tonight and it was very good. I did not have fresh basil so I used a little dry.

This soup is perfect as an introduction to a full Greek meal, or a hearty bowlful for a meal in itself. Serve with fresh pita triangles, and you'll be sure to please your guests!!

An orzo pasta salad with chicken, feta cheese, olives, and grape tomatoes is served in pretty red bell pepper cups and garnished with leaves of fresh oregano. It won a blue ribbon at the fair!

This is good hot or cold. I don't serve this in the pepper cup like it is suggested unless I'm trying to impress company.

Long-grain rice and orzo are simmered in chicken broth with hazelnuts and mushrooms and seasoned with parsley and marjoram.

I like this a lot. I usually use toasted slivered almonds instead of hazelnuts.

Tiny ovals of orzo pasta, toasted golden brown in butter, is cooked in bouillon with long-grain rice to make an easy and versatile side dish. Try tossing with chopped parsley and a grating of Parmesan cheese before serving.

This is another one I've tried. Very easy. It just takes plain ole rice up a level. There's something about sauteing it before cooking in water that makes it better.

A cold pasta salad with orzo, green olives, feta cheese, parsley, dill, tomato, olive oil, and lemon juice. If you don't have fresh herbs, use 1 teaspoon dried.
