A delicious source of fiber! My family have them almost every morning. You may substitute dates for the raisins if you wish.

Hello there how is your weekend. Do no know if this will work for you as it does have buttermilk.

Was going to suggest this, too! You can always add a bit of white vinegar to regular milk and let it sit for a couple minutes to sub for the buttermilk.

Bran muffins are made with bran cereal, apple, banana, honey, and plump raisins.

This is another one. Just waiting for pie to come out of the oven then it is off to outside and listen to music until I have to make dinner. It is nice here today.

An old school one... 1 c sifted all purpose flour 3 tbsp. sugar 1 tsp saly 1/4 tsp baking soda 1/2 tsp baking powder 1 c bran 1 tsp grated orange peel 1 egg 1 c buttermilk 1 tbsp. butter or margarine Sift flour, sugar, salt, soda and baking powder into a medium bowl, then stir in bran and orange peel Beat egg slightly with buttermilk (or your equivalent) in a small bowl, dump into dry mix all at once and combine (will be lumpy) Spoon into muffin tins to 2/3 full, and bake at preheated 400 degree oven 15 minutes or until golden, removing from cups and serving warm. These are two bite types, about 34 calories each.

chairlifter, thank you very much, iam printing this out and will make all three of these to compare. I'm not a baker, but can hold my own.I make a great carrot cake, which is in my recipe box,i bake these things and give them to the child care at the local YMCA.I like to make healthy things for the children, and always make sure that I tell the care givers what is in them, just in case. Thanks again and have a great night.
