Good Morning ~~ hope everyone's having a great Thursday mornin'!! OK, bought quart of half and half last week. Used 1 cup in something I was making. It stares at me everytime fridge is open, like it's saying *pleeease use me*. Would you be willing to recommend anything you have or know of? OMGosh, can't even remember what I made last week using it ~~ must be that **senior moment** kickin' in. Thank you for your help. K.

Hi, try this. cheers. Asparagus Soup 2tbsp Extra Virgin Olive Oil 450g/1lb Asparagus Spears - Stalks only - prepared and roughly chopped 2 Shallots - chopped 2 rashers (slices) Pancetta (or unsmoked Streaky Bacon) - chopped 450ml Chicken Stock 60g/2oz Crème Fraiche (or Single Cream {Half & Half}) Salt and freshly ground Black Pepper Asparagus Tips - for garnish Water- for cooking Asparagus Tips Heat the oil in a medium to large Saucepan; Add Pancetta and sauté for 1 minute; Add shallots and sauté for further 2 minutes; Add Asparagus stalks and sauté for a further minute; Add chicken stock, bring to boil and simmer for 5 minutes or until the asparagus is just tender; While stalks and chicken stock simmer, in a separate small pan, bring water to boil, add asparagus tips and parboil for 1 to 1½ minutes; Drain and set aside; Meantime, remove stalk mixture from the heat and “blitz” with blender until smooth; Return to heat, add crème fraiche, stirring until well combined; Season with salt and pepper to taste and simmer for a further minute; Ladle the soup into individual bowls, garnish with asparagus tips and serve immediately with fresh crusty bread.

We really like this. I make it with turkey Italian sausage and fat-free half-and-half because we have to watch cholesterol.

The name says it all! Fresh asparagus is simmered with garlic and light cream, and served atop linguine pasta. Serve with shredded cheese, if desired.

This is good. I used the same ingredients but did not boil the asparagus. I think it would be oover-cooked if boiled for the recommended time! I think I sauteed the asparagus.

I us it when making clam chowder. In fact I think that's the only time I use it.

Do you like curry? This is great. This calls for heavy whipping cream, but I would think half and half would work, too.
