Grilled Onions

Whole onions are stuffed with a chicken bouillon cube and a bit of butter, wrapped in foil and grilled to perfection. A sprinkle of cumin or garlic would add a nice touch.

Good morning! I haven't a clue what I'm having for dinner, but I will make these. I've had a half-bag of white choc chips in the freezer since Christmas, time to get them used!

Don Apr. 25, 2013 3:19 am Lasagne Salsa Boloñesa 300g/10oz Minced Beef 2 tbsp Extra Virgin Olive Oil 45g/1½oz Pancetta (or Unsmoked Streaky Bacon) - chopped 1 clove Garlic - finely chopped 2tbsp Onion - finely chopped 2tbsp Carrot - finely chopped 2tbsp Celery - finely chopped Dried Spice mix 1½tsp Basil, 1½tsp Oregano, ¼tsp Coriander and few twists of the Pepper Mill. 1 x 170g tin Tomato Puree 2 x 400g tins Italian Plum Tomatoes - chopped 250ml White Wine FOR LASAGNE Packet Lasagne sheets - no cooking required type 60g Butter 45g Plain Flour 1 Camembert Cheese - rind removed and finely sliced 60g/4tbsp Parmesan Cheese for topping - grated 300ml Chicken Stock 200ml Double Cream Salt and freshly ground Black Pepper Salsa Boloñesa Heat oil in large pot or frying pan; Add pancetta and fry gently for some 4 minutes or so or until brown but not crisp; Add onions and garlic and fry gently, stirring occasionally for 1 minute; Add carrot and celery and continue cooking, stirring occasionally, for further 3 minutes; Add Spice Mix, stir in well and continue cooking, stirring continuously, for 1 minute Add mince and break down and brown slightly for some 3 minutes or so; Add wine, turn up heat and reduce by half; Initially, continue stirring to breakdown mince completely so no lumps; When wine reduced, add puree, stirring in quickly to avoid burning; Add tomatoes, stir to break down further and bring to boil; Reduce heat and simmer, stirring occasionally, for about 45 minutes to 1 hour LASAGNE AND CHEESE SAUCE Preheat oven to 300F/150C/Gas 2 FOR CHEESE SAUCE - Melt butter in a small pan on low heat; Stir in the flour and, stirring continuously, cook for a minute or so to form a smooth paste; Blend in Chicken Stock and Cream and, stirring continuously, bring to the boil; Reduce heat to low and continue stirring until thickened - no lumps; Add camembert, stirring continuously until melted and smooth - no lumps; Season to taste and set aside; FOR LASANGE - Smear bottom of baking dish with sauce and cover with layer of pasta; Mix remainder of cheese sauce with bolognaise sauce; Layer baking dish with sauce then layer of pasta until full; Sprinkle the remaining parmesan over the top layer; Bake in oven for 40/45 minutes or until brown and bubbling

I've had lasagna two weeks running. lol I made it last week in the pressure cooker (yep, and it worked!). Then we had a going away party for one of my co-workers yesterday and four of us made four different kinds of lasagna (about 20 pounds each). I've been eating it every day now for a week. Not complaining because I love it, but...wow. haha

My lasagna is like my chili it never turns out the same way twice. Flavors depend on the mood I am in at the time of mixing

This is the way to get crisp bacon without having to constantly turn it, watch over it, or get burnt by splatters of grease. It 'fries' up flat and doesn't curl, which looks great beside a breakfast plate of eggs, and makes BLT sandwiches much easier. Very nice when feeding a family or crowd.

This is the only method I use for making bacon, Elle! Godzilla, we never get to eat breakfast (like this) @ breakfast-time, so this is always a welcomed dinner in the house.

Don's lasagna recipe reminded me that I have everything for this recipe. After making the Tofu Lasagna, I haven't been too anxious to make even a half-recipe, as it takes a long time to get it all eaten when DH isn't home. I still have some of the small Barilla lasagna noodles.

Cut leftovers into small squares and freeze for quick meals or lonely lunches. I even pull them out for breakfast
