What can I do with left over roast beef? It's dry. Sad face. Not enough to make sandwiches for everyone.

Heat some beef stock> easy from a carton, buy the good stuff. Fill semi hard rolls with beef and dip the whole sandwich in stock. Layer with your favorite toppings.ie: cheese, horseradish, tomatoes,etc. Delish!

Hi,you could add it to spaghetti sauce and have some type of pasta.

Was looking at this chicken taquito recipe earlier. Might work with the roast beef. And you would only need a little at a time. If you do go with this, read the reviews. Very helpful.

I was going to suggest quesadillas. I made a huge batch with chicken today. finely chop the meat & season, mix together with shredded cheese. Throw a handful on a tortilla, and cook on griddle till brown & crispy. I keep them in ziplock bags in the freezer for school lunches.

Creamed chipped beef served on buttered toast --- a great breakfast! This is affectionately known in the military as SOS, "$#@& on a shingle." You may vary ingredients to suit your taste. Don't over thicken the gravy, it should drop off the spoon.

Cook some egg noodles, Open a couple of jars of beef gravy and add the beef. Drain the noodles add some butter and the beef gravy. Serve with some green beans.

I used leftover roast beef for this, added just at the end, see review. Since yours is dry I'd slice it into thin strips. Add more veggies to stretch it. I thought this tasted better as leftovers so make ahead is good too.

Chop your roast beef and use it for hash in place of the corned beef in this recipe (or similar hash recipe, this one was just pretty straight forward). It's a great meal stretcher.

I dont know if this is something that you would be interested in, but we usually do it with either sandwich meat or baked chicken; i think it might work. Make a breakfast quiche, using layers of older bread, meat, cheese slices in a 9"x9" or 8"by8" baking pan. Beat 2 eggs w/ milk, herbs and tabasco sauce. Bake for about an hour at 350.
