Cheesecakes -- Is it possible to bake them in a 9x13 pan or a pie plate? We don't have a springform pan... Would appreciate suggestions and advice! Thanks!

GFG, that is a good question. I have never tried it. Go to this link and be sure to read the comment by Alton Brown at the very bottom. Good luck! http://boards.straightdope.com/sdmb/showthread.php?t=650767

I stand corrected. Wonder what opening the door for one minute is about. To cool the oven down a little maybe?

The above site also looks like a chat forum. I bake my cheesecake at 300 for 1 hr. and then remove to let it cool. Alton tends to usually have some unorthodox methods to his recipe so I assume that is the 'open door for 1 min'....line.....LOL.

Unfortunately I would think not because there wouldn't be any easy way to lift it out of the pan. Wish there was a way being as I don't own a springform either. My daughter and I are going to finally make some mini cheesecakes using muffin tins and liners.

Hi, You could also make cheesecake cupcakes and good tip I have learned is to only use foil liners when making them as the paper ones tend to get soggy!

I use the 9x13 when making cheesecake for a large group and it works fine. Springform pans are NOT necessary and you can even use a round solid cake pan if you cover the bottom with parchment paper. Just invent after it is chilled to more easily remove. I have also use pie plates and they also work fine.
