Good Morning! I have a few jars of cut up tomatoes with seeds that we canned last year.Besides pasta sauce and chili what can I make with these? Thanks so much.

Hi, try these. cheers. Lebanese Chicken with Tomato and Mint Salad Serves 2 3tbsp Extra Virgin Olive Oil 4 thin BLSL Chicken Breast Escalopes 3½tsp Sumac + extra To Serve - set aside ½tsp ground Cumin ½tsp ground Coriander 2tbsp White Wine Vinegar 250g/½lb mixed Tomatoes - plum/vine/cherry - chopped 6 small Radishes - trimmed & thinly sliced Handful fresh Mint Leaves - shredded ¼ Cucumber - finely sliced and cubed 1tbsp flat leaf Parsley - chopped Salt and freshly ground Black Pepper In a bowl mix 2tsp Sumac, Cumin, Coriander, 2tbsp Oil with Salt and Pepper to taste to create a paste; Rub all over and coat Chicken and set aside; In a large bowl, mix the remaining Sumac, Oil and the Vinegar together and season with Salt and Pepper to tatse; Add the Tomatoes, Radishes, Cucumber and Parsley and toss vigorously together to ensure everything is well coated; Scatter over the Mint Leaves; Grill or Griddle Cook the Chicken for 1 or 2 minutes on each side or until cooked through with the juices flowing clearly and freely; Serve with crushed new potatoes with butter and the Salad over which sprinkle with a little extra Sumac.

Don’s Jalfrezi Style Lamb Curry 4tbsp Vegetable Oil 450g/1lb Lamb Shoulder - cubed 1 large Red Onion - finely sliced 2 cloves Garlic - finely chopped 2 Red Chillies - finely chopped - you can remove some seeds to reduce heat - Can always add more back later if the taste is too mild 1 x 2” piece fresh Ginger - peeled & grated 2tsp ground Paprika 2½tsp ground Coriander 2tsp Garam Masala ¾tsp ground Cumin 2 x ¼tsp Salt ¼tsp Chilli Powder 4tsp Lemon Juice 2 x 400gr tins whole or chopped Plum Tomatoes 2 x 125gr cartons natural Greek or Greek Style Yoghurt 1 Green Pepper - chopped Bunch fresh Coriander - chopped Salt and freshly ground Black Pepper To Serve Basmati Rice and/or Naan Bread, Chapatis & Papadums Method Mix the Paprika, coriander, garam masala, cumin, chilli powder and ¼tsp salt together in a small dish to form a flavour enhancing spice mixture; In a large bowl, blend the tomatoes, yogurt, lemon juice and ¼tsp salt together to form a rich, smooth mixture; Heat 2tbsp oil in a large frying pan and add the lamb; Cook over a high heat for 3 to 4 minutes, or until the lamb is sealed all over; Remove and set aside; Reduce the heat and add the remaining oil; Add the onions, garlic and ginger and fry gently, stirring occasionally, for 3 to 4 minutes, until golden and softened; Add the spice mixture and chillies and fry, stirring continuously, for 1 to 2 minutes to release the fragrance and aroma of the herbs; Add the tomato mixture and increase the heat to bring to a boil; Reduce to a Simmer and simmer for some 5 minutes or so until sauce has reduced slightly; Add the lamb and stir well; Heat the mixture until simmering, then cook on a low heat for about 1 hour or so or until the lamb is tender and cooked through; If the sauce becomes too thick, simply add more yoghurt; Add the green pepper and most of the coriander (reserve some for garnish) and cook for some 10 minutes more; Taste for seasoning, garnish with coriander and serve.

Mediterranean Tomato Soup 2tbsp Extra Virgin Olive Oil 2 cloves Garlic - chopped 1 Large Red Onion - chopped 1 Carrot - sliced 1 stick Celery - chopped 500g/1.2lb ripe Tomatoes - peeled and chopped 24fl oz/1½ pints Chicken Stock 1tsp Sugar Salt and freshly ground Black Pepper TO SERVE Fresh Basil - shredded Heat oil in a large saucepan, add onion, carrot, celery and garlic, and cook gently, stirring occasionally, for some 5 minutes or so until soft; Add sugar and tomatoes, season to taste, stir well to mix and cook, stirring occasionally, for a further 5 minutes or so until the tomatoes begin to soften and break up a bit; Add the stock, bring to the boil and, reducing heat, simmer gently, uncovered, for some 15 to 18 minutes or so until reduced and thickened a bit; Remove from heat and “Blitz” with a blender until smooth; Ladle into bowls and serve with the option of basil on the side.

This calls for stewed but I'd use the homemade you canned.

Using 2% milk gives this rustic soup just a little bit of creaminess without all of the fat. You can easily make it vegetarian by substituting the chicken broth with vegetable broth.
