Huli Huli Chicken

A Hawaiian variation of teriyaki chicken is marinated in a pineapple juice mixture and baked in a hot oven. Turn and baste the chicken every 10 minutes for flavorful, brown, tender meat. Serve over sticky rice.

Plans changed lastnight so I'm making this tonight. I'm a little concerned about the sherry. When I open the bag, it's all I can smell. Did anyone else notice it so much? I'm thinking about adding more pineapple juice but don't want to change the flavor. Thoughts?

Morning Lisa. When I made it I didn't find the taste of sherry to be strong at all. I could taste the pineapple juice loud and clear. (also my sherry was very strong smelling in the bottle).

Morning Sunshine! The sherry wasn't as strong as it smells. This chicken is absolutely delicious and I can't wait to make it again.

Thanks Marianne We liked this chicken. Lisa I did notice the smell of the sherry to be very strong. I would say fear not. lol

Hello Lisa and everyone. Has anyone made this without the sherry. I want to make this but don't want to use the sherry. Is it a necessary ingredient?

Mediterranean Chilli Beef 300g Minced Beef 45g/1½oz Pancetta (or unsmoked streaky bacon) - chopped 2 tbsp Extra Virgin Olive Oil 3 cloves Garlic - finely chopped 1 large Onion - finely chopped Dried Spice Mix of 1½ tsp Paprika, 1tsp Oregano, ½ tsp Coriander, ¼ tsp Cumin, ¾ tsp Chilli Powder, ¾ tsp Cayenne Pepper 1 x 170g tin Tomato Puree 2 x 400gr/14oz tins Italian Plum Tomatoes - chopped 1 x 400g/14oz tin Red Kidney Beans - in Water Liberal splashes of Worcestershire Sauce - to taste To Serve: Rice - Pitta Bread - Baked Potato Method Heat oil in a large pot/pan, add pancetta and cook gently for 3 to 4 minutes until bacon is golden but not crispy; Add Onion, Garlic and continue to cook gently, stirring occasionally, for some 3 to 4 minutes or so until the onions soften a bit; Add spice mix, combine well with onion mixture and cook, stirring continuously, for further 1 minute; Add mince and, stirring continuously, break down and brown slightly for 4 to 5 minutes or so until NO LUMPS; Add puree, stirring in quickly to avoid burning; Add tomatoes, Worcestershire sauce and kidney beans, stirring continuously to mix well; Bring to boil, reduce heat and simmer, stirring occasionally, for about 45 minutes to an hour.

We had a couple of warm days and now it's supposed to cool a little. That's good...not ready for summer yet. And these summery temps in April scare me. Makes me wonder what we'll get in July and August!

Hi Chirstina, we had fried rice last night and I took egg roll wrappers and cut into thin strips and fried as chinese noodles. (cook very quickly) They are super dooper yummy. Duck sauce on the side of course!

Good morning everyone! I am beyond excited for my husband to arrive today. Been 6 long weeks since I saw him. I don't know how those military families do it. He told me he wants to take me out to dinner... woo hoo! He sent me a beautiful bouquet of flowers two days ago telling me he loves me and can't wait to see me. I feel like a school girl... Hadn't been sent flowers in years!!! Have a great day my friends, I know I will!

I don't know how the military families endure the (often) year-long separations either. Very hard on the couples and the kids when mom or dad is gone for so long. Our SIL is doing his second tour in Afgahnistan. They are able to email but the kids sure miss their daddy! And our daughter is tired of being a single mom. Heart goes out to our military families and others that are apart. Glad your guy is coming home Lindsay!

We've record breaking oppressive heat the last few days. I refuse to turn on the A/C in early April! Cold salads fit the bill!

Lol. I had to turn the heat back on, here, It's A New Day! It was hard to make myself turn the heat on in April. But freezing is freezing, and I don't want to deal with broken pipes--or step out of the shower into a twenty-degree room. It should be much warmer today.

I have large potato's and a load of veggies to use up (mushrooms, asparagus, red & green pepper & spinach) I plan toss them all together in some kind of stir fry! Not sure if I will throw in a can of soup to thicken it up OR 2 eggs!!! HMMMMM

I wish my boys would play ball again :( I do NOT miss 4-5 nights of running every week, tho! With my daughter out of tennis this season, I have to say that it's been really nice not running around every evening.

Godzilla, I saw this recipe when I did a search yesterday. Now, I love cream cheese but never thought to put in on hot dog. I'm not sure if I want to try it. Let us know how you liked them. Sounds like you have a day that I had yesterday. Hope you can get a little "you time" in :)

Well, just my two cents. I tried cream cheese and tuna for the February Faceless Pinterest board. Thought it sounded too weird for me, but LOVED it! Cannot wait for someone else to try hot dogs with cream cheese and let us know!
