Making a Creamy Tomato Potato veggie soup. Thing is I'm not crazy about milk in my soups. Can I just use more chicken broth & leave out the soup? The soup is on this site. My soup is 2 cups of sautéed onion,carrot,celery,4 cloves minced garlic, 3 onions chopped, then 5 cups small chopped potatoes. Add 2 -28oz. cans diced tomatoes with juice, 1/4 cup of tomato paste, oregano, parsley, pepper. Will leaving out the milk ruin this? Thanks!!!

Personally I don't think leaving it out will cause a problem, make as you wish and hold out the extra liquid to see if you actually need it, you may not! Have fun!

Yikes, almost 1/2 the 8 qt. pot is filled with the chopped veggies & that does not include the chopped potatoes yet. Had to put 1/2 ingredients between 2 pots.

I've made "cream" soups by blending raw cashews & water (1 to 1 ratio) in my vita mix blender. Came out super creamy and added protein. I think the raw works better than salted/roasted BTW.

How much veg. oil vs. solid shortening? Can butter be used for shortening ?

No butter/shortening. Just sautéed veggies in some olive oil. Tastes pretty good. Added more seasonings (basil,oregano,pepper & chipotle pepper & a little cayenne)

I have added 1-2 tblspns of apple cider vinegar to soups/stews. Gives it a nice flavor. Mostly bean/chkn broth/veggie soups. Don't know if this would be strange since this is mostly tomatoe

i would say leave the milk in. thats whats gonna make it creamy.

Too late. Tomorrow, when it naturally thickens cuz of all the potatoes,veggies--I could use a potato masher on some of the potatoes--but I have a feeling it will thicken more so over night.
