Hello everyone! I have a "beef round sirloin tip roast. Total weight was 11 pounds but the hubby cut it in half. So now I have 2 5.5 pounders, Can this cut of meat be roasted to medium rare? I know certain cuts need to be cooked through but not sure about this one. If it can be cooked to medium rare what temp should my oven be set and how long would I cook it? I do have a meat thermometer but not sure what internal temp it should read to be medium rare. TIA for any help! Have a good afternoon!

I love to find that meat on sale and cut it up as stew meat (unless it's a big hunk?).

Beef can generally be cooked to the level of doneness your family prefers. We don't personally care for rare/medium-rare since it tends to be chewy when prepared that way, but it is really a matter of personal preference. Use a meat thermometer to tell when done to the desired level since each large cut of meat will cook in varying times.

Low and slow gives you all sorts of control over the cooking Most Canadians like their beef a bit more "done" than do Americans, so I've sort of learned to do 325 degrees for about 35 minutes per pound, wanting to finish between 145 and 155.
