Hi everyone! Since I have started my new job working nights and overnights, I am exhausted all the time. At night my boyfriend is left to cook dinner and he cant cook much. Any idea's for make ahead meals or slow cooker meal that I can leave for them? Thanks!!

When you do cook, make extra. Then place spoonfuls into muffin tins and freeze. Pop outta the tins and store in plastic freezer bags to save space. Then there are single-serving size goodies ready to microwave. Of course this doesn't work for everything. Best for casseroles, soups, veggies... And you can take some to work as well.

Meatballs and sauce could be frozen and thawed, all your boyfriend has to do is boil some pasta.

Yes you can use a slow cooker by putting in a Roast or pork roast in the slow cooker in the morning. With about one inch of water. Put in one onion diced or sliced, four potatoes sliced (wash the potatoes and you don't have to peel them), 6 carrots sliced(wash the carrots and you don't need to peel the carrots), salt and pepper, any veggies that you want to add. put it on low cooking and put a lid on the slow cooker and it will be ready when they come home that evening. You can use about any kind of meat you want. It will fall apart when you try to dish up some food. It is yummy and it is so easy to do and it does not take long to put it together.

Meatballs can be cooked so many ways-sweet and sour, BBZ, with spaghetti, or as an appetizer If you buy or make larger meatballs, .you can leave them in the crockpot on "low" for 7-8 hours. When I worked nights, I usually added sauce when I got up.

Chicken breasts are dipped in beaten eggs and cracker crumbs, then baked with butter. These chicken breast are really tender and moist. Excellent flavor! I never have leftovers.

These can be prepped in the morning and put in the oven when you get up in the evening. I'd save enough coating to dip once more before putting in the oven. I never used the butter and used Ritz crackers, but I'm sure it's even better with the butter. Easy to have with a bright frozen vegetable and baked potatoes-esp if you nuke the potatoes for about half the usual microwave time, then put in the oven with the chicken.

Lasagna freezes well and takes a while to bake, but is good if someone is home early enough to put it in the oven. Are any of your kids old enough to be responsible for putting this or any casserole in the oven?

Mushrooms, onions and ground beef in a ready-made pasta sauce are layered with cottage cheese, ricotta cheese and Parmesan between uncooked lasagna noodles. Sprinkle mozzarella over the top and bake. It's that simple!

Here's a lasagna recipe that doesn't require cooking the noodles-I used to assemble a very similar recipe and keep it in the freezer for when we had unexpected guests. It was well liked.

Agree with Ellie on this on in the freezer. I also prep mine the day before then leave it in the fridge till the next night then pop in the oven.

This is good over rice. I always cooked rice on the stove, but I've heard that rice cookers are awesome and inexpensive. If you don't have one, you might want to try borrowing one to see if you'd use it.

Ohh, this is one of my favorite go-to meals, we eat it at least once a month. I make rice ahead of time and reheat it. Rice freezes too.
