Can I peel my potatoes for dinner the day before I make mashed potatoes? I have peeled them in morning and placed them in water in a covered bowl and refrigerated the morning of but never the day before.

If you have the time, just go ahead and make the mashed potatoes the day before. I'm doing mine right now for tomorrows dinner.

I agree with SassyLady. I make my mashed potatoes the day before and then reheat on low in my crockpot the day of the event. Avoids the last minute crunch.

You can even make them now and bake in oven when you need them (if you have oven space). Look up "Make Ahead Mashed Potatoes" and you will see a few options.

Restaurants have been buying them canned in water for years...the advice above is very good.
