I have a 12 lb rib roast. How long do I need to cook this roast?

Depends on how you like it. Generally it is 15 min/lb but if you like it rare you should cut that in 1/2. Biggest thing is to use a meat thermometer and when it starts getting close, check often. Don't touch any bone and check in thinner and thicker parts if it is not uniform.

Meat thermometer is the only way to go on something that large. The center will be less done then the outside part.

Depends on what temperature you cook it at: I would say at least one hour on 425° followed by at least 8 hours at 275° to 350°. It will cook the fastest and be more tender if you cook it with a liquid (broth) either in a Dutch oven on the stove or in a pan with high sides in the oven. The key for faster, more even cooking will be to make sure you cover it (lid or foil will work).

I would never cook a rib roast in liquid, since it tends to have a lot of fat. You want to bake at somehing like 350 so the fat dissolves and drip away from the meat. Use a roasting type pan so the fat drips away from the meat and doesn't smoke in the oven during baking.
