Slow Cooker Western Omelet

A great solution for busy mornings. Just put the ingredients in your slow cooker before going to bed, and it will be ready for breakfast.

I used fresh potatoes and shredded them because I didn't haven any frozen hash browns. I cooked my sausage and used up some ham too. I mixed together the potatoes, ham, sausage, onions and peppers. I put in a layer of potatoes, a layer of cheese, potatoes, cheese, potatoes, cheese. I then mixed milk and eggs and spinach (my own addition) and poured over the top.

Hey Molly! I am not good about following up on my posts but I thought I would report on my progress from yesterday....actually surfing these updated posts looking for my own avitar...yours caught my eye and to my surprise it was addressed to me! lol....My casserole turned out perfect! I worried all night about it, got up and checked it a couple of times. I cooked it from 10 til 6 am and it was great! From reading some reviews I decided it might be a good idea to put a crock pot liner to keep the eggs from burning and it did the trick. Thanks for your tips....like your recipe too. I used a lb of sausage as I have to make another for tomorrow so I was cutting down on the expense...only had a red pepper which made it prettier. Love the idea of putting in the crockpot overnite....so easy! Have a great day!
