SARAHFCR is asking: (2 answers)
We love frying canned sliced potatoes, but has anybody tried oven-frying them, like on a cookie sheet or jellyroll pan? It would be less messy than splattering oil everywhere, and would probably be healthier! When I fry them in a skillet, all I do is drain them well before adding them to the hot vegetable oil with salt & pepper to taste. Thanks in advance!

Yes, you can use the oven for this. I would line the baking sheet with parchment paper so the potatoes don't stick and clean-up is easily. They also bake more evenly that way. Bake time would be determined by how thick the slices are so you can tell by looking when they have reached the desired level of doneness, much like when frying.
