I would like to make a cake. The carrot cake recipe I've listed looks wonderful, however I do not have any carrots. It is snowing out and I don't feel like going to the store just for carrots. Do you think I could substitute pumpkin for the carrots and still get a pretty good cake? http://allrecipes.com/recipe/carrot-cake-iii/detail.aspx

I should have mentioned all I have is canned pumpkin. Would that work?

Carrot cake without the carrots would be more like a spice cake. Can't imagine it would hurt to add some pumpkin but I don't think I would use all three cups. I don't know, I could be totally off here, just would hate for you to waste ingredients.

hi kk- i love this cookie recipe- the spices are spot on- soft & chewy-- yum- and to make it into a cake- would be heaven:-)

:-)- taste the batter- to make sure you have the spices you want-- i will bring the milk- or put on the coffee-- see ya in a couple of hours-- enjoy:-)

It turned out okay. Really moist but I think I would up the spices in it next time, it tasted fine when I tested the batter. Also, I did follow some of the reviews and used 1/2 oil and apple sauce and 1/2 brown and white sugar. Worth making though, and I will make it again sometime after I make that carrot cake. Thanks again for your help.

Well, it wouldn't be carrot cake but it should be fine...go for it!

You can always use grated zucchini instead of carrots.
