Nutmeg~n~Pepper is looking for: (4 recommendations)
Happy Saturday, everyone. I'm planning to have Fettuccine Alfredo for my daughter and her husband for Easter. Does anyone have a favorite alfredo sauce recipe they can share? And, because we all like to cook, we're thinking of making the noodles ourselves. I thought I had a recipe saved, but it looks like I don't. Can anyone share? Thanks in advance!

Great! That's a receipe I had saved, but I had no idea if it was any good...It looks simple enough. thanks a bunch!

This is excellent! Very rich and creamy. I make my own pasta. Do you have a pasta roller? For me its too hard without one. I just use 1 cup flour to 2 eggs for every 2 people, no salt, no other additives. Mix the eggs and flour, cover and let it rest a bit, knead it after resting it about 30 min, then use flour as needed to roll it out. DH who doesn't like pasta, loves them!

Thanks petey--I was wondering how much to make. I appreciate the info. Yes, I'm borrowing a pasta from a friend (yay-friends!). I'm also grateful for the method help.

Thank you both. I've tried one like this, but the SIL wasn't a fan of the cream cheese (the snob). ;-)

It just takes a few minutes to make wonderful, homemade noodles. All you need is flour, egg and a pinch of salt. What a tasty addition to fresh chicken soup!

There's no taste like home-made pasta! You'll love how a simple concordance of egg, salt, flour and water yields deliciously tender pasta to use immediately or even several days later. Hint: let the pasta sheet dry for 20 minutes before cutting.

I use this recipe from the Kitchen Boss -aka Cake Boss- Buddy Valastro. BUDDY'S ALFREDO SAUCE: 1-1/2 cups best-quality heavy cream, room temperature: 6 Tablespoons best-quality sweet butter, room temperature: 1-1/2 cups parmagiano reggiano grated powder-fine, plus extra for table service: Few gratings fresh nutmeg: Salt: 1 pound egg fettucine, the thinnest fresh, or dried pasta nests: PREPARATION: Start a large pot of well-salted water to boil. In a saucepan, heat the cream to a simmer for about 5 minutes. Add the butter, cheese and nutmeg and stir to combine. Turn off heat and set aside. Cook pasta until al dente. Turn into a colander, give one shake add to cream sauce. Turn pasta to coat and melt butter. Pasta should be just-coated with a glossy cream. Remove from heat and plate immediately, Passing with extra cheese, if desired.
