My oldest son learned to scramble eggs and chili together - grosses me out, but he used to eat it at his friends house and loves it. Also, you can use it like a taco salad - or even a baked potato topping.

I've also turned it into sloppy joes, I'll add a bit of ketchup and brown sugar to get it a bit more sweet.

I have made something very similar to this....serve with corn bread muffins. You may not need extra meat depending how much meat your chili had. I doubt if it'd be missed. Quick and easy!

You probably wouldn't need the extra chili seasoning either.

I don't have a recipe but but my mother used to use leftover cornbread and add all kinds of leftover vegies, beans and hominy were a must and always chili. She used a can of beef vegetable soup (Dad was a Campbells soup fan) and stir it up and put it in a casserole dish and add extra chili flavoring by using a chili brick chopped over the top (found in the freezer section) but you could just put a layer of the chili you have over the top. Bake until bubbly and brown. My sister and I loved it as did my parents and it was such a good way to use leftovers. Mom saved them in the freezer until she had enough to make this.

Stir rice into the chili and make beef bean & rice burritos. Freeze till you want again. Heat and top with whatever
