We're having this w/steamed broccoli & dinner rolls. It's snowing like CRAZY right now. Huge fluffy snowflakes. It's so pretty but it still makes me grumpy. Grrrr. Good news! The concussion clinic miraculously had a cancellation & can get my daughter in tomorrow!! I won't be around in the morning so don't wait to post!!

Lisa - we are dealing with concussion with 9 year old daughter here too. Wish we lived in a less rural area - no concussion clinics here. Hope all goes smoothly - wish I had more time to check back in to see what you hear.

Oh, Thank God, LIsa! Isn't it something...when a Dr. gets involved, all of a sudden they have a 'cancellation'? In any case, that is wonderful news, and I hope you all can get some answers...Thoughtd, prayers and good vibes being sent (((hugs)))

Bigcountry-I'm so sorry you're going thru this also. I bet it's hard to keep your 9 yr old down. If you need to talk, please do a shout out for me. I haven't been around as much as I usually am but I'm hoping life will settle down soon.

Hi, welcome back. good news re clinic. best of luck!!! Having friends over, so try this. cheers. Malagueña Style Peppered Steaks 2 heaped tbsp Mixed (red/white/black/green) Peppercorns - crushed 4 x 8 oz Fillet/Sirloin/Ribeye Steaks 1tbsp Extra Virgin Olive Oil 6 Spring Onions - trimmed 45g/1½ oz Butter 120ml/¼ pint Beef Stock 3tbsp Brandy Salt Garnish: Spring Onion - curled Put the crushed peppercorns on a large plate and firmly press both sides of all the steaks on to them, ensuring all are well covered; Place steaks on large plate, cover with cling film and chill in fridge for some 2 hours or so; Cut 1in/2½cm pieces from the green ends of the spring onions and slice into strips; Place the strips in a bowl of water and chill until curled; Thinly slice the remaining onions; Heat oil and ½oz butter in a large frying pan until butter begins to foam; Add steaks and cook on both sides on a medium heat to desired state (about 1 to 2 minutes each side for rarish - 2 minutes plus for medium/rare and so on etc); Remove steaks from pan, transfer to a warm plate and set aside; Add non-curled spring onion to pan and cook for 1 minute; Pour in stock and brandy, increase heat to high, bring to boil and boil rapidly for 2 minutes until liquid slightly reduced; Turn off heat, whisk in remaining butter and season with salt if required; Arrange steaks on serving plates, pour sauce over each one and garnish with the curled spring onion; Serve.

I would always ask my mom 'What's for dinner?' and the response would be 'I don't know.' I said I was going to make up a dish called 'I don't know' dish. It turned out pretty good. Ground beef, potatoes and cheese are layered with a few vegetables in this simple one dish meal.

I'm with you guys. All I know for sure is no beef. I'm on beef overload between last week's recipe group pie and then corned beef for three days.
