Spinach and Tortellini Salad

This salad is a snap to make and looks and tastes very Italian. Cheese tortellini are cooked al dente and tossed with spinach, Parmesan cheese, cherry tomatoes, sliced black olives, and a prepared Italian dressing. Great barbecue salad.

This looks good. Have to go to parents house. Their idea of great food is probably not what you're thinking. :(

I just always cook a box of rotini (usually the tricolor), drain and run cold water till pasta cools, and drain again. Cube cucumber, grape tomatoes, mozzarella, zucchini, yellow squash, peppers, whatever else you want to throw in there(pepperoni, mushrooms, radishes). If you can get some McCormicks Salad Supreme(spice jar in the spice aisle), sprinkle some of that on it, probably couple of tablespoons. About a teaspoon of sugar. Then either zesty Italian or Ranch dressing. Mix. Viola, pasta salad!

Oh, and be prepared for the pasta to suck up all the dressing and have to add more.

This is really excellant. I leave out the salami. Make the day before then add more dressing before serving if needed.

Some of the family wants this. Others want one where I mix a packet of Knorr vegetable soup mix with mayo & a little milk to dress any pasta & vegetables. My favorite is penne with sliced artichoke hearts, black olives, balsamic dressing & sprinkled with parm. I always make any pasta salad the day before, cook the pasta to slightly chewy, add more dressing the next day.

I can certainly agree with what Sassy says about the pasta, and the prep. I like to go a little "crazy" with the spring onion, radish, fine chopped celery and either mayo (some of the new offerings of Miracle whip may be worth a look) as are the Yoghurt based dressings, together with tuna or salmon...fresh peas being another thought...but this divides itself into being sort of "regional"...different parts of the country would like different things.
