Can heavy whipping cream and half and half be used interchangeably? I already have the half and half, didn't want to buy heaving whipping cream if I didn't have to. Thanks!

It depends on what you are making, but usually you can use the two interchangeably.

As long as you are not whipping it. I use them interchangeably.

Thanks so much for the responses! The recipe calls for stirring 1/2 cup heavy whipping cream into a soup base but I suspected I could just use half and half instead. Thanks for confirming! LOVE this site!

When you are adding cream to a recipe, its usually to add fats and smooth out the taste and mouth appeal. So using half and half will technically "work", it just won't be as good as it might have been with the heavier cream. (But you'll have less plaque in your arteries!)

Not for whipping as in butter / stiff cream

I read that you can use canned cream remember my sister-in-law use to freeze canned cream and make whipped cream out of it when I was a kid I would chill the cream and then use it...

No, they are different altogether. If you have a blender, you can "whip" it, but it won't stay foamy. It will come out like a flat whip cream, be sure to sweeten and flavor it if you go that way.

As a soup base as you indicated above this sort of sub would be fine.
