I'm vegetarian and make food for my non veggie family a lot. Usually anything with cheese and pasta is good. Lasagnes, stuffed shells/manicotti are good and you can give meatball options if people want them. Eggplant parmesan, quesadillas, burritos (I.e. bean and cheese), fajitas (can add shrimp and meat separately if desired), vegetable stir fry (again, can add stuff separately), spanakopita (spinach pie)....I could go on!! If any of these recipes specifically appeals to you, I can probably recommend a recipe.

Mark Bittman's How to Cook Everything Vegetarian is a great book for taking main stream recipes and vegging them. More serious books would include The Kind Diet, anything Moosewood, and Vegonomicon. There are more that I have used, all from the library. I also find Vegetarian Times very valuable. AZ93 and other vegetarians or vegans will probably have the best recipes. Our favorites started out as someone else's. Good luck from one aspiring vegetarian to another.

We aren't vegetarians or vegans. So if some of the recipes include chicken broth or whatever you can likely just sub veggie broth.

I'm not a vegetarian but don't mind a veggie meal occasionally. These are really good. Needed a bit more cooking time. That is probably because Denver is high altitude.

I have had this saved for a long- but never made....t I am going to now!!! we are also limiting meat in our diet but I have growing boys to feed!! This has a lot of comments about what beans to use.

This was my other suggestion (= I LOVE this recipe! I do it a little differently, though. I use black beans in place of the red. And I use a whole wheat corn tortilla that I warm on the burner. I put cheese, taco sauce, sweet potato, and beans down the center of the tortilla, and roll it "enchilada style," placing it seam side down on my plate, then I top with plain Greek yogurt and avocado. I don't bother to bake or fry these - there's no need! SO good!
