Can I freeze lemon bars? Does the powdered sugar on top melt into the bars? How long can they stay frozen before use? I'm wanting to make some treats before my kids arrive for a visit and want to be able to just pull some from the freezer.

Yes you can freeze the bars but use a freezer bag and remove all the air before you freeze. I believe that if the bars are hot when adding the icing sugar then it will melt into the bars. As long as they are in air tight container they should freeze up to 6 months.

Thank you for your quick response. I havae the Ziploc handy air remover pump with bags and love them.

Sunflower, just freeze the bars without the icing sugar and sprinkle it on top right before serving!

Ditto Naan's comment; if you use a strainer and pour a little powdered sugar in, then dust the lemon bars right before serving (after they thaw), they'll be just like fresh!

When I freeze lemon bars, I omit the powdered sugar until I defrost them.
