I am cooking Easter dinner, are there any dishes that can be cooked the day before and heated in the microwave? Thanks!

A veggie is the first thing that comes to mind. Any reason for the micro and not the over?

Any quiche would work great. It's Eastery and you could make a few flavors. Keeps well for a few days and is good hot or cold. Pair with a fruity salad.

You can make these ahead several days and store in the fridge. If baking cold, let stand 30 minutes first.

I always make mashed potatoes the day before and heat them up in a crock pot the next day. Just stir every once in a while. ..............also make salads etc up to the point of mixing. You can have everything cut and in baggies and just throw together at the last minute.

I agree with burnscreek. I have made these for Thanksgiving the day before and they are good. Stored in crockpot liner in frig overnight, then turn on warm in the morning. I had to whip in a bit more milk.

Veggie rotini pasta, cucumber, olives, and onion in a creamy dressing with dill and garlic salt makes this a delicious version of a classic springtime dish.

Fruited Cranberry Relish

This recipe came from my aunt, who for many years invited our family to her home for Christmas dinner. I took great delight in helping myself to this relish because she always served it in one of her fancy dishes, used only on the holidays. -Ruth Collins, Blossvale, New York

You can prepare the salad ahead of time then add dressing at the time of serving.

Slow Cooker Mashed Potatoes

Red potatoes are boiled with garlic and chicken bouillon, then mashed with sour cream and cream cheese. Then the potatoes are slow cooked for a couple of hours, allowing the flavors to meld.
