I just noticed that this trifle has only three reviews and had to have been published in 2004 or even earlier (first review 2004). I cannot believe this has been ignored all these years! This is better than any I have made before.

I rarely do a menu here on AR but this one was worthy of saving. I also did steamed carrots, sauteed parsnips & steamed cabbage. Just a perfect menu for st paddy's day :)

This is an old family recipe and it is the ONLY way I cook corned beef.We no longer care for the boiled method.

Julie, I had to stop in and tell you that I will NEVER make my corned beef any other way, after making it like this yesterday. Baking Nana helped me convert this to cook in an electric roaster and it was PERFECT! I even converted a few corned beef haters too, lol. Thanks you for sharing this wonderful recipe w/ us...It's a new favorite! :)

I too made it yesterday. And it was delish, the one person in the house I was concerned with is my son and he never liked corned beef and last night he ate to plates. I did put mine in the crock after I braised it because I needed the oven, worked great and was just as moisted and flavorful. Making Irish egg rolls with the leftovers this evening.

I hope you see my comment ... I'm making your corned beef recipe tomorrow or Tuesday ... do you need to trim the fat away or will it all melt off during the cooking process? I hate fat and have never tried this method and welcome any helpful hints. TIA.

Linda, roast it fat side up. When it is completely done, you can scrape the fat cap off cleanly.

M. - we just made today... Was just awesome! 2 of my wee ones (twins 2) are picky eaters and won't eat meat... They asked for seconds!!!! Happy St Paddys!

Here's another fabulous recipe for corned beef. I tried the braised version to see what it was like but we didn't like it at all. This has been our go-to corned beef recipe ever since I found it on AR several years ago.

Kandi & Mark I also noticed your review and critique regarding your interpretation of braising. I braise many things with a tiny bit of liquid from vegis to meats. Here is the definition of braising for your future reference.
