Okay I took the kids and the boyfriend shopping with me so needless to say we ended up with some rather strange things one being a whole fresh coconut which they picked out just because they want to crack it open =/ any idea what I can do with the darn thing once they have had their fun with it?

Break out pieces and eat it raw! It's absolutely delicious and incredibly good for you.

I would do the same thing, just eat it! Also, the water inside the coconut is great in smoothies. I buy cans of coconut water in bulk for using in smoothies.

An old boyfriend used to make pina coladas with fresh coconut and they were to die for. Cut the meat into chunks and put them in your blender or food processor instead of using cream of coconut in this recipe. Yum!

By all means send him. You never know what treat he will come home with! These would also be good without the alchohol but I love the rum taste. Very Caribbean!

That is a very valid point its almost kinda scary to send him for anything lol . I think I'm gonna do em both ways so the lil ones can enjoy the find lol again thanks so much =)

Your welcome. I'm not sure how my ex made them but I know the fresh coconut sent them over the top. Hope you enjoy them.

My grandmother made a coconut cake that the family loved. She did not read or write so many of her recipes were lost. I have no idea how this one tastes but read the reviews, one with no stars calls it Fabulous.
