You do not have to get fancy. Slice them thin and add them to a simple spinach salad with crumbled bleu cheese. No dressing.

Hmm...sometimes I add them to my egg salads in place of all that mayo. It's such a delightful replacement.

We love them so much, I can't bear to add them to anything. We split in half, remove the pit, add lemon or lime juice and dig in just like that right out of the shell. It's a special snack for us.

LOVE abocoados! Great by themselves with salt. On a toasted bagel with cream cheese (with or without tomatoes, and salt). Mixed with egg yolks instead of mayo for deviled eggs. Replacement for mayo or mustard on a sandwich. Sliced on top of any sushi roll. Mixed in homemade salsa. BTW Meat Legs, don't know if u saw last post, but I live in St John and saw you went there. OT I know, but just wanted to see if you enjoyed it and how often u go!! -Lara

Ok, I love a good abocado but like avocados even more. (Where the hell is spell check when you need it? Lol).

I love it mashed on toast and sprinkled with seasoned salt. My other obsession is a "healthy" cracker [high protein, high fiber] - rye krisp or Dr Kracker cheddar pumpkin seed, with a light laughing cow [blue or queso fresco with chipotle] wedge spread on it, smoked salmon or Canadian bacon, and avocado. [I do just the cracker and cheese for a 100 cal snack, or add the meat and avocado for a light breakfast]
