My daughters are asking me to prepare vegetarian meals for one week. I think they got this idea from a foods teacher in high school. I really need to have a talk with that person. A little warning please!!! Anyway, I've found an abundance of wonderful sounding vegetarian dishes, many Indian, but I am puzzled about how to put a menu together. A portabella burger with sweet potato fries and steamed broccoli is easy, but what do you pair with Bangaladumpa, or Sundal? I would love some advice on understanding the cuisine quickly!

Served with biscuits and a salad, this soup is delicious on a chilly autumn evening. It's one of my family's favorite.

DS: Sorry. No help with Indian food. Are you accepting other suggestions? I believe this qualifies as "meatless" rather than "vegetarian." I make this at least once a month. Fresh Veggie Wraps

These versatile vegetable wraps combine fresh tomatoes, cucumber, green bell peppers, and lettuce with tasty mozzarella cheese and seasoned avocado mayonnaise. Add veggies, swap veggies, or add seasoned rice or quinoa for a more filling wrap. Great to make for parties, as they are easy to make, portable and require no immediate refrigeration.

This recipe brings the authentic flavor of India into your kitchen. It's a delicious combination of red lentils (masoor daal), ginger, turmeric, cayenne pepper, onion and cumin. Serve over plain or spiced rice.

Garbanzo Tomato Pasta Soup

A VERY easy vegetarian meal in a bowl. The combination of garbanzo beans (chick peas) with pasta creates the complex proteins a vegetarian needs. Very palatable for the garlic and tomato lover.

I would say a meatless soup or pasta would be pretty easy- then you can serve with a nice salad and some lovely bread, and you have dinner. Meatless sandwiches- I believe there is a zucchini grinder recipe on here- with potato salad or coleslaw and some cut up fruit is a nice dinner. And breakfast for dinner is a nice change too- pancakes or waffles, omelets loaded with veggies, fruit. These suggestions may fall more under "meatless" than "vegetarian"...I am not sure, but those would be my thoughts were this sprung on me out of the blue :)

This is an easy and delicious take on a Louisiana classic that you can prepare and cook in 40 minutes! I use turkey kielbasa to cut down on the fat, but not the flavor.

I'm wondering how to add some smokey flavor into this without adding liquid smoke. I might try smoking the rice over hickory.
