Thanks everyone for the parsley tips/suggestions. The pesto turned out nicely. Unfortunately, noone in the family is a fan. Ah well. We can't please them all. Dinner was still lovely. Made the pan seared salmon and scallops (that's what the pesto was for), the lobster mashed potatoes and the green bean bundles. We ate like kings and feel like stuffed pigs now. Haha!

Sounds lovely. I have to admit I do not care for pesto. I like everything in it but it does not taste good to me. Sounds like you had plenty of other yummy stuff to please them with.

If you are a fan of regular old tuna salad, try stirring about a tablespoon of pesto into it. Adds a nice zip without having that overwhelming pesto flavor. A generous teaspoon is also good on browned pork chops. Just a few suggestions aside from on pasta. Enjoy!!

OMGarsh, patticakes, your dinner sounds wonderful! Do you need a partner to help you with leftovers? (= [I love Costco's salmon! It's a "take and bake" that comes topped with a basil pesto butter - so good!]
