Pleasanton Mom is looking for: (10 recommendations)
Hi There! So I'm trying to stick to a strict grocery budget this month and am hoping for some inexpensive but hearty recipe ideas. We eat mostly chicken breats, some red meat (including ground beef) and pork chops/tenderloin. No fish! I'm in CA with lots of veggies that we love and we also do beans. Okay, any ideas?

A comforting tomato, zucchini, and eggplant stew with the flavors of southern France makes a great side dish to serve hot or as a nice lunch served cold with cottage cheese.

This is a great recipe that use to be on AR. Swap the taco shells for lettuce and it is healthier and lower calorie. http://www.tasteofhome.com/Recipes/Tasty-Lentil-Tacos

Chilli is a great meal if your on a budget, and it can be super healthy too! Make extra, and then freeze some so you get a few dinners out of it

This is very good. You could also just make any stir fry with your veggies.

This is a one pan meal that's in the oven in 15 minutes. Rosemary, garlic, and oregano create a mouth watering aroma and the potatoes are crispy like french fries. Kids just love this!
