We have a massive fundraising bake sale tomorrow. I have several cake mix boxes in the pantry and just discovered that 3 of them that I was planning to use have a "Best if Used By" date at the end of 2012 (October/November). Is there a secret to re-amp them so I can use them up? We're feeding teenagers - cake box mix is fine for them. Baking Soda? Help! I was going to make cupcakes with them. TIA!

That is my opinion also but if you are not comfortable with that try the cake mix cookies you can use any flavor cake mix.

I've used long expired cake mix and it worked just as well as new, so you should be just fine.

They are fine but adding extra vanilla extract or a bit of espresso helps improve the flavor of mixes.

You should be fine. Maybe make cookies if they don't rise :)

As long as they have remained sealed and never got wet, they should be fine. Those dates are based on getting the optimum results and powdered mix products remain shelf stable for quite a long time if properly stored.
