Cayenne pepper provides the "fire " in this salad of tomatoes, peppers and onions marinated in a cooked dressing. Sliced cucumbers provide the "ice " as they are tossed into the salad just before serving.

I can't think of a recipe I see that I want to make every time I see it - BUT! every time I mention or recommend mashed potato tacos, I start craving them! A crispy fried taco shell, filled with mashed potatoes, shredded cheese, diced tomatoes, shredded lettuce, and red taco sauce. SO good!!!

Being of Portuguese decent and raised in Rhode Island along the Eastern seaboard, this recipe is a wonderful combination of my two heritages. If desired serve with a small cup of melted butter for dipping clams and don't forget a fresh loaf of warm, crusty bread!!! Note: If the clams seem sandy, soak them for a couple of hours or overnight in the refrigerator in salted water with a bit of vinegar, cornmeal, and cayenne pepper.

One of my absolute faves on this site...a nice crusty bread to soak up those juices and a cold glass of white wine on a hot evening outside...heaven!
