I had some delicious roasted veggies (sweet potato, cauliflower, broccoli, onion) over pasta for dinner tonight. I would love to take some leftovers for lunch tomorrow. Any thoughts about how best to warm it up? I usually microwave my lunch but not sure how the veggies would hold up to that. I think we probably have a pan that I could use on the stovetop. Thanks for your help!

My Italian husband HATES to reheat pasta in the microwave . . . he always does it in a pan on the stove, just like his mother does!!! Me on the other hand, hate dirty dishes, so I use the microwave!! (His method is probably better thought)

When I reheat, I use 50% power for a longer time. That seems to work best for me anyway. More even and heated thru without over-doing it.

I reheat in microwave uncovered all the time...plus...I roll them in a flour tortilla with a little cheese, top with enchilada sauce and a little more cheese, microwave in a glass container, covered, then top with a little salsa.

I do that with roasted veggies.....not the pasta.
