gderr the dysfunctional is looking for: (4 recommendations)
i'm making fried shrimp, stir-frying sme mixed veggies and roasted or baked tater wedges. question is i want to save some taters and make for breakfast with bacon and eggs. here's the 2 tater recipes i'm considering. how would you repurpose the taters for breakfast? either recipe or do ya have a suggestion for another tater recipe? i really would like either potato pancakes or hashbrowns. it's just 2 of us.

Hi Gary! In San Diego we had the most Fantastic fried rosemary pots for breakfast you ever ate!!! Just make these but double them. Tomorrow, fry up eggs and drop on top of the potatoes. I Just might have to try these too!!

Btw, I can not begin to tell you how incredibly Crispy they were!! And I don't know how they did it. The Mission is the restaurant. I am thinking they dusted them in flour before they fried them up. Sorry for hijacking Gderr!

These! I do this a lot. For breakfast I just cut into smaller pieces, saute in some butter to heat up, then add the eggs. Stir until eggs are set. Um um good! Or just saute in butter till warm and serve with eggs separately. Can also add some onion and peppers to taters too.

The sugar makes'em crispy! I couldn't taste the sugar in them.

At my house, potatoes for breakfast means mashed potatoes on toast! Or a bagel (= Sprinkled with seasoned salt - yum!

OR! "Bread Sausage!" Fried potatoes, and fried, cubed bread, then scrambled with eggs! Oh, YUM!
