I am making the flourless chocolate cake for friend who is gluten intolerant. How far ahead can I make?

A day or so, I guess -just set in on a plate and cover it.

I made Flourless Chocolate Cake II from this site last week. Kept well for several days. Be sure to cover (plastic) well.

It also freezes well, if you ever need to make it well in advance.

You could always refrigerate it so it keeps longer. Most flourless cakes are so dense it is like eating a candy bar, so you generally can only eat a small portion.
