I'm from South Africa and I do not know what "half-and-half cream" is. Is there a substitute? This product is unknown here.

Half and half is equal parts of heavy cream, sometimes called whole cream, ai think, and milk. Half and Half is a mix of light cream and milk (reducing the fat content) the site about.com says it is 4 parts whole milk and 1 part heavy cream. I think you can use cream unless you are watching your calories. I just use cream. Cream will hold peaks when whipped and I think it tastes better but I have used half and half in some recipies too. Depends on what is in the fridge. Happy cooking! Evelyn

I believe half and half is half milk and half cream. You may know it as half cream.

If in doubt, I would use light cream. In some recipies, half and half doesn't work properly. I know after researching it that it is no good to used half and half for fettucini Alfredo, as the half and half will break, you need to use cream.
