Does anybody know a substitute for evoprated milk? I need 8 cans for a recipe and only have 5 cans.

It might depend on the recipe, but I've used milk before, or cream or half n half.

I googled "substitute evaporated milk" and got several hits. Here's from one website: Evaporated milk  is milk that has been cooked down to allow some of the water content to evaporate. The concentrate is canned, and the result is a heavier tasting milk with a slightly toasted or caramelized flavor. If you don't have any, Make your own: to produce 1 cup of evaporated milk, simmer 2 1/4 cups of regular milk down until it becomes 1 cup. "In many recipes, evaporated milk may also be replaced with a combination of whole milk and half-and-half. For 1 cup of evaporated milk, use 3/4 cup whole milk and 1/4 cup half-and-half." _______ There was also info on making it with powdered milk. Good luck.

I've used dry milk powder in place of concentrated milk before. Just use less water than called for in the directions.

I've tried Indiana Peggy's way before and it worked out perfect, it took about an hour to go from 2 1/4 cups to 1 cup...

I always use the powdered milk with less water than called for.

I googled that for you and there seems to be a lot of different ideas.
