Good morning! I'm going to give this a try tonight. Kind of nervous, as I always make salmon the same way(sprinkled w/cajun seasonings & grilled or baked). Not sure how well this will be received. Eeek. We're having steamed broccoli & rice. Do you think wild rice would go with this or do you have another suggestion?

probably plain white rice with this salmon- but- i can eat your wildrice if you want to make it anyway- love wild rice:-)have a great day- off to work- can't wait to get home & check on the group recipe nominations:-)

Love this recipe, Lisa! And if you don't have the peanut oil, olive oil or even canola is fine. And when it comes to rice, I think just about any type of rice would be fine. Well maybe not Mexican style. Have a great Friday!

Hi I would think about lightly flavoured chinese medium noodles. The dish seems right for them. Hope helps. cheers.

Ugh. I'm out of white rice. Noodles would be a good idea just not sure I want more pasta, but maybe. IDK. I think I just don't feel like cooking. Hopefully this mood changes by dinnertime.

Thanks nanny! I'm not a fan of brown rice but I do have some. The wild rice I have is Uncle Ben's Original. It's our fav :)

This looks so good! But, since I'm not able to have dairy, what can I sub for sour cream? I'll be using soy milk in place of cow's milk. I have never seen the soy kind of sour cream locally.

or a plain non dairy yogurt, maybe?! It would probably have to be drained thru cheesecloth since it's runnier.

Hi, Rainy friday so oven on. Today this. Mediterranean Baked Lamb Chops 4 Lamb Cutlets Extra Virgin Olive Oil Salt and freshly ground Black Pepper Optional: Can scatter fresh herbs or mixture of herbs over the meat (Oregano, Marjoram, Rosemary, Thyme, Parsley, Basil etc); Preheat oven to 190c/380f/Gas 5; Oil a foil lined baking tray; If using: Sprinkle herbs over the meat; Oil, salt and pepper the meat; Bake for some 10 to 15 minutes or more depending size until just cooked through and the juices are running freely and clear. Check with fork as you wish and turn once during cooking; At most, a touch, and I mean a touch, of brown colour in the juices;

Savoury Potato, Green Bean and Bacon Salad 1kg/2lbs Potatoes - boiled and cut into cubes 225g/8oz Green Beans - blanched and cut into 2 to 3inch pieces 1 Red Onion - very finely sliced 180g/6oz Streaky Bacon Rashers - fried until crispy and broken into crispy bits Salt and freshly Ground Black Pepper Dressing 4tbsp Extra Virgin Olive Oil 2tbsp White Wine Vinegar - to taste 1½tbsp Wholegrain Mustard - to taste Salt and freshly Ground Black Pepper Prepare the dressing - mix the mustard and wine vinegar together, season and slowly drizzle in the oil, stirring continually, to bind everything together. Taste for tanginess and piquancy; Put the potatoes, green beans, onion and the crispy bacon bits in a large Salad Bowl; Combine well together and season to taste; Pour the dressing over the potato mixture and serve warm.

DH claims he'll be home tonight & wants to eat out. We'll see, since he'll have to drive on backroads to get here (unless I-70 has opened). My supervisor's DH is taking me to work, as we have a huge snowdrift in front of the garage that seemed to stay the same size no matter what I did yesterday. My back door is blocked by snow and I shoveled the porch four times yesterday in an effort to keep the front door cleared. I think I deserve pizza tonight! Have a great day, everyone!

It's Friday! Someone posted this pasta salad on here recently and I had a chance to throw it together last night and WOW was it good! Must be the best Italian pasta salad I've ever had. So definitely will be having a bowl of this with whatever else. Probably pizza.
