Is there anything I need to know about 'bread flour'? Can I just use regular flour?

Bread flour has more gluten in it. Yes, you can use regular flour.

bread and "regular" (i.e. all-purpose) flour are not interchangeable -since bread flour contains more gluten, you want to use it for yeast breads. If you use bread flour for cakes or cookies, they won't turn out right, they'll be tougher. But if you use all-purpose flour instead of bread flour, the structure won't develop properly, and the texture will be more cake-y than bread-y.

Bread flour has a slightly higher % of protein that helps in the formation of gluten. From a practical standpoint you can use AP flour instead of bread flour and it works fine in yeast doughs. I only buy bread flour and use it for all of my cooking/baking needs and have never had any issues. This avoids having to store them in 2 separate containers. AP flour may take a bit longer to rise in yeast doughs but you will probably never notice a difference.
