Whiskey and Bacon Banana Bread

And now for something completely different: the flavors of bananas, bacon, and whiskey liqueur give mini quick breads an exciting new taste.

Don't hate it, don't love it. The banana taste is not very pronounced but I didn't have banana extract and that probably would have made the difference. You definitely can taste the whiskey and the bacon. The bacon "bits" bothered me some although I kept trying to convince myself it was just like nuts. I don't think the special honey whiskey was necessary, regular would probably do the job. I think if I was to make it again, I would leave out the bacon all together. I'm curious to see what DH says about it when he tries it tonight.

After thinking about it, I think a handful of mini chocolate chips might have balanced the flavors a bit.

Interesting. Did you make it today or yesterday? I'm guessing it's one of those types that's more flavorful the next day but I still don't think I can do bacon in my bread. I don't think it belongs in cupcakes either :(

I made some savory breakfast muffins with bacon and actually liked them okay at first but the leftovers were barely edible for me. No more bacon in bread for me :)

I was curious what you would think of it. Think I will stick to the good old traditional banana bread with walnuts!

Choc chips (I use milk) in banana bread /bars always well liked here.
